Salami. That thinly sliced meat found to be so irresistible on charcuterie boards. When we think fermentation, we typically default to pickles. Not in this case. We went behind the scenes with John Ratliff, Founder and Head Butcher of Ends Meat, to see how his team makes salami. We left with some meat science under our belts and satiated taste buds.
